When we had cattle and we had to purchase our hay we always would throw salt onto the round bales. This would help dry out any extra moisture in the hay and the cows would pretty much clean up the hay better between each bale.

I am a little bit late to the game, however, I am assuming that you will be putting up a timber frame building as by and large you Americans do and the “ footings “ or as we say foundations are not engineered to take the load off a single span 180 so the ( kinda ) obvious question is why have you not done foundations the length of the building to carry the load of the uprights that will support the load?

Another benefit of the 5075 is that you can run it all day (even turning an 8 foot bush hog mower on 5-7 gallons of diesel as long as you are not in 4WD. Try that with a 6000-series.

Here in Central Minnesota the hay is ready but can't get more than 2 days of dry weather. At least our ground is still ok unlike some farmers not far from us. I used to unload the wagons of alfalfa on a dairy farm for an old family friend. We did about 1200 bales a day and unloaded and stacked all by hand. The only catch was the guy’s father did the baling and he loved to pack as much hay in a square bale as possible so they never weighed less than 80lbs. It sucked but after it was done it felt amazing

Have you considered getting a trailer that hooks on the back of the square baler and can carry 5 bales as they are made. Then the bales are dropped at the end of the field and you don't have to drive around the field to pick up. Saves time fuel and wages. Also hay is in the barn faster.
